The troubles of not fuelling properly in the morning has plagued modern man since working 9-5 became; 8 till whenever-I’m-finished. Who has time to enjoy some proper grub at 6am when anything that involves getting out of bed earlier through the winter months is instantly shot down by the brain as a crime against all things right in the world. Bellow we show you a fully balanced and natural homemade breakfast alternative that you can enjoy to-go, and will stop you making a beeline for that sugar-filled vending machine at 10am. Make this at the weekend and it’ll keep good for 4 weeks.
Total prep and cook time: 30min
4 cups rolled porridge oats
1/2 cup pecan nuts (unsalted)
1/2 cup almonds (unsalted)
1/2 cup pine nuts
1/2 cup sunflower seeds
1/2 cup peanuts (unsalted with red skin attached)
3 tablespoons peanut butter (no added sugar)
2 tablespoons dried blueberries
2 tablespoons dried cherries
1/2 cup pure honey
2 good glugs olive oil
Pre-heat the oven to 180 degrees.
Crush and extract the peanuts from their shells, trying to keep the red skin intact, and place to one side for later.
Gently melt the peanut butter and honey in a pan over a low heat.
Using a large bowl, add the peanut butter, oats, pine nuts, sunflower seeds, then crush in the pecan nuts and almonds using your bare man hands.
Add the olive oil and mix.
Spread the mix evenly onto a large baking tray and chuck in the oven for about 20mins or until golden and damn right delicious looking.
Remove half way through and gently mix – Gentle being the key word here as you don’t want to break up those big clumps.
Once out the oven leave until cool and add the berries.
Store in an airtight container or some funky mansion jars if you want to look like a pro. Keep in a cool dark place and it will keep fresh for 4 weeks.
Enjoy with natural or greek style yogurt, adding some fresh strawberries or blueberries if that’s your thing.
